This is a sort of Mediaeval cartoon. It's about slaughtering a pig.

At the top, there's a man about to knock out a pig using the blunt side of his axe. If he gets it right, the pig's heart will keep beating so that the pig will bleed out by itself. I won't go into detail. In the bottom picture, someone is searing the pig's hairs. The pig will then be scrubbed and torn into pieces. That's how meat was processed in the Middle Ages. This book belonged to Eleanor of Aquitaine. It's said that she was one of the most beautiful women in the Middle Ages. She's also the only woman who's ever been Queen of England and Queen of France. First, she married the French king, and then she married the English one.

It's not that strange to see a farmer in a book that belonged to a king. Farmers were incredibly important in the Middle Ages. They made sure that people had food on their tables, including the king. Of course he also liked sausages and bacon from time to time.

This is a book of psalms from around 1180. It's really old. The picture is for the month of December, the month of slaughtering. This was a really lush book. The pictures in the calendar are as big as an entire page. A book of psalms (or psalter) is a hymn book with a calendar at the front. It told people which hymn they had to sing on which day, in church or at home.
